Shrimp Scampi with Butternut Squash Noodles
I usually make this recipe with zucchini noodles but I couldn’t find them at the store, so I went for the Butternut Squash Noodles and I’m so glad I did! This recipe is under 20minutes and super easy to make. I hope you like it as much as I did 😉
Ingredients:
Drizzle of extra-virgin olive oil
1/2 pound of shrimp, peeled and deveined
Salt and pepper to taste
1 tablespoon unsalted butter
2 garlic cloves, minced
Chili flakes to taste
10.7 OZ of Butternut Squash Noodles
1 fresh lemon juice
1/4 cup of chopped fresh Italian parsley
1/4 cup of white wine
Instructions:
Heat oil in a large skillet over medium-high. Season shrimp with salt, lemon, and pepper. Cook, flipping once, until opaque, about 3 minutes; add the white wine and cook for another minute. Transfer to a plate.
In the same pan where you cooked the shrimp, reduce heat to medium to then add butter and garlic to skillet. Cook for about 2 minutes.
Add the butternut squash noodles to the pan, add salt, pepper, and chili flakes. Cook stirring for about 4 minutes. Add the shrimps, more lemon, and the chopped fresh parsley before serving.
