Shrimp Scampi Linguine
Today I’m satisfying my pasta cravings with one of my favorite pasta recipes, Shrimp Scampi Linguine! It’s powered by garlic, parsley and chili flakes for a final and delicious kick. It is also super easy to make and it takes under 30 minutes to cook.
Ingredients:
1 1/2 pound of uncooked Shrimp (peeled and deveined)
4 garlic cloves thinly sliced
1/2 cup of white wine
2 tbs of butter
Salt and pepper to taste
Red hot chili flakes to taste
1 lemon juice
1/2 cup of parsley
Olive oil (approximately 1/2 cup)
1 lb Linguine No.7 (I like De Cecco)
Instructions:
Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 9 minutes. I like my pasta al dente and so I always cook it for 1-2 less than the instructions in the package.
Meanwhile, in another large pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute making sure the garlic doesn’t burn. Add the shrimp and turn up the heat to Medium-High and season with salt, pepper, lemon juice and chili flakes and saute until the shrimp have just turned pink, about 3 minutes per side. Right after you flip the shrimps, add the wine. Remove from the heat, and add half of the fresh chopped parsley. Toss to combine.
When the pasta is done, transfer the pasta to the pan where you cook the shrimps, and make sure to add 3/4 cup of the pasta water into the pan with the shrimps and cook for about 5minutes on low-medium heat. Add the remaining of the parsley, toss well and serve.
