Poached Eggs Over Roasted Potatoes
Ingredients: (serves 2)
1 large potato
1/2 red onion (thinly chopped)
1 tomato (thinly chopped)
1 garlic clove
1/2 tsp Paprika
1/2 tsp Cumin
Salt and Pepper to taste
4 eggs
Olive oil
2 stripes of Prosciutto or Bacon (optional)
Pre-heat the oven to 400 F. Cut the potato in small cubes and transfer them to a baking tray. Drizzle with olive oil, salt and pepper and bake for 15minutes. Remove from the oven, and add the tomatoes, onions and season with paprika and cumin (add a little bit more salt and pepper if needed) and send back to the oven for another 10-15min, make sure they don’t burn.
If you want to add crispy prosciutto or bacon at the top of your eggs when you serve them, then this is the time to put that in the oven. Forget about cooking that in a pan, they get crispier in the oven (and you also avoid a big mess in the kitchen) keep an eye on them!
While the potatoes are in the oven you can start making your poached eggs. For the perfect poached eggs, I follow downshiftology’s poached eggs recipe, they really turn out perfect!
Remove the eggs from the oven, serve the potatoes on a bowl and place 2 poached eggs on each bowl. If you are adding crispy prosciutto or bacon on top, this is the time to do it! Make sure you cut this in tiny pieces so they look like prosciutto crumbles 🤤 add pepper at the top and enjoy!
