Caprese Egg Muffins
Ingredients: (serves 3)
5 eggs
1/2 cup of chopped and pat dry tomatoes
1/4 cup of fresh basil
1 garlic clove (minced)
1/2 Mozzarella ball (cut in stripes)
Italian seasoning
Salt and pepper to taste
Instructions:
Coat a muffin tin with nonstick spray.
Whisk together the eggs, garlic, salt, pepper and Italian seasoning. Fill each cup three-quarters of the way to the top with the mixture.
Bake at 375F for 10min.
Cut the tomatoes and basil and pat dry with a paper towel.
Slice the mozzarella and cut it in small stripes.
Remove muffins from the oven, add the tomatoes, basil and mozzarella.
Place back in the oven for another 10minutes.
Broil for 1-2 minutes until they look golden.
