Savory Crepes

Savory Crepes

Ingredients:

For the crepes:

  • 3 tablespoons of unsalted butter (melted)

  • 1 cup of all-purpose flour

  • 1 tablespoon of granulated sugar

  • 1 teaspoon of salt

  • 3/4 cup of whole milk

  • 1/2 cup of water

  • 2 large eggs

For the filling:

  • 1 chicken breast (shredded and seasoned with garlic, Italian herbs, cumin, and salt & pepper)

  • 1/2 cup of ricotta cheese

  • 1/4 cup of mozzarella cheese

  • 1 chopped tomato

  • 1/2 cup of chopped spinach

Let’s start making the crepes by adding all the ingredients to a blender. Once all the ingredients are mixed, we need to put the batter in the refrigerator for 45-60 minutes (this step is super important so don’t miss it.) When cooking the crepes, make sure you butter the pan, skillet, or crepe pan and set it on medium heat. To make sure the crepes are super thin, use about 3 tablespoons of the batter per crepe and cook for about 3 minutes each side.

Once your crepes are ready, prepare your filling by mixing the chicken with the ricotta, parmesan, spinach, and tomato in a bowl.

Place a few spoons of the filling in the center of the crepe. Fold both sides over the filling and warm them up in the skillet or pan or simply serve them room temperature (I personally like them warm).
