Healthy Salted Peanut Butter Cookies
Healthy cookie recipes can be as delicious as any other regular recipes, sometimes even better and I’m going to prove that to you with this recipe!
How many times do you find yourself craving sweets? and how many times do you feel guilty after? These cookies let you indulge without guilt. They are made with Monkfruit “sugar,” almond flour, and of course peanut butter! I found a similar recipe online but I decided to give it my own twist to make it even better.
You can thank me later ;)
Ingredients:
3/4 cup of peanut butter
1/2 cup of almond flour
1/4 of sugar ( I used Monkfruit sugar)
1 tablespoon of Cinnamon
1/2 teaspoon of sea salt
1 egg
Parchment paper
Preparation:
Set your oven to 350F before you start making your cookie dough. In a bowl, mix all the ingredients together. Start kneading the dough with your hands until everything is well mixed up (I used gloves since peanut butter can be super sticky).
Separate the dough into 12 even balls and place them on a tray with parchment paper (make sure you also spray some cooking oil on top of the paper) With a fork or the bottom of a cup you can smash the balls to turn them into thin cookies (as seen in the picture below) Place them in the oven for 10 minutes at 350F.
Once the cookies are ready, sprinkle them with cinnamon powder and sea salt. Let them cool down before serving.
