Paleo Blueberry Pancakes
I’m usually all about savory breakfasts but from time to time, I wake up with a sweet tooth and what’s better than some pancakes? and even better if when those can be grain-free ;)
Ingredients:
2 eggs
1 cup of almond or coconut flour
1/4 cup of water
1 spoon of melted butter
1 teaspoon of vanilla
1 teaspoon of Monkfruit Sugar
1/4 cup of fresh blueberries
For the topping:
Extra blueberries and strawberries to top the pancakes with.
Dulce de leche (you can find it at a Latin supermarket or Amazon) This is optional but adds so much flavor!
Instructions:
In a blender, mix all the ingredients together until the mix is smooth, adding the 1/4 cup of blueberries at the end (for like 2 seconds) Don’t freak out when the mix turns purple! that is supposed to happen :)
Heat a large griddle or nonstick pan over medium heat and grease with some butter. Pour or ladle small amounts of pancake batter onto the griddle. Wait until edges are dry and bubbles form on the surface of the pancakes, then flip each one.
Serve topped with the maple syrup, blueberries, strawberries, and Dulce de leche!
