Cassava Flour Pancakes
I LOVE pancakes!!! but I don’t love the calories that come with them, so if I can make something almost as good as real pancakes, I would!
Let’s be real, nothing “gluten-free” and “paleo-friendly” would ever be as good as the real thing but these ones can get pretty close ;)
Ingredients:
3 eggs
¼ cup melted butter
¼ cup almond milk
1 Tablespoon of honey
¾ cup of cassava flour
½ teaspoon of baking soda
1 ½ teaspoon of vanilla extract
Pinch of salt
1 peach, thinly sliced and caramelized (How to caramelize peaches)
Bunch of Sliced almonds
Instructions:
First, whisk the eggs, and then slowly add the remaining ingredients (except the caramelized peach and almonds)
On a greased skillet over medium heat, cook pancakes for 2min per side with the lid closed. Remove lid and cook for another 4min per side, or until golden brown and cooked through.
Caramelize your peach.
Serve with maple syrup, caramelized peach, and almonds.
