Smoked Salmon Quinoa Salad

Smoked Salmon Quinoa Salad

A simple and easy salad to make for a light lunch or dinner.

What do you need?

  • 1/2 cup quinoa , cooked and cooled

  • 1/4 red or white onion , chopped

  • 7 cherry tomatoes , halved

  • 1/4 cup of raw Kale

  • 1 teaspoon of capers

  • 5 Artichoke hearts

  • 1 Avocado

  • 5 oz. smoked salmon , sliced

For the dressing:

  • Olive oil (about 3-4 spoons)

  • 1 Lemon

  • 1 clove garlic, chopped

  • Salt and pepper

Cut all the ingredients and mix them in a medium bowl ( leaving the avocado for the end.)

Make the dressing in a separate small cup and then add it to the salad. Mix it all up and enjoy!
