Smoked Salmon Quinoa Salad
A simple and easy salad to make for a light lunch or dinner.
What do you need?
1/2 cup quinoa , cooked and cooled
1/4 red or white onion , chopped
7 cherry tomatoes , halved
1/4 cup of raw Kale
1 teaspoon of capers
5 Artichoke hearts
1 Avocado
5 oz. smoked salmon , sliced
For the dressing:
Olive oil (about 3-4 spoons)
1 Lemon
1 clove garlic, chopped
Salt and pepper
Cut all the ingredients and mix them in a medium bowl ( leaving the avocado for the end.)
Make the dressing in a separate small cup and then add it to the salad. Mix it all up and enjoy!
