Butternut Squash Soup

Who doesn’t love a great soup on a cold or rainy day? They literally warm-up your body and soul. The story of this soup is actually very close to my heart; one of my best friends, Viviana, actually cooked this for me once and it was incredibly delicious! Especially since she doesn’t considered herself a great cook but I actually tend to disagree with her regarding that statement ;) This recipe actually came from her mother, and I do love a great recipe that keeps passing from generation to generation. Those are always the best recipes!

I hope you love this soup as much as I do!

Ingredients: (serves 4-6)

  • 1 medium butternut squash 

  • 1/2 yellow onion

  • 1/2 orange pepper

  • 1/2 yellow pepper

  • 2 garlic clove

  • 6 cups of Chicken broth

  • 1 cup of water 

  • 1 tb of melted butter 

  • 1 lime (juice) to taste 

Instructions:

Cut the butternut squash in half and remove all the seeds. Cut it in smaller pieces along with the onion, yellow pepper and orange pepper. 

In a large pot at medium-high heat, boil the squash, onion, peppers and garlic in the chicken broth and water. Add salt to taste. Cook for approximately 30-40 minutes until the squash is soft.

Remove all vegetables from the water/broth and remove the skin of the butternut squash. 

Add all vegetables to a blender and start adding some of the water/broth into it until you get the desired consistency for the soup.

Add the melted butter, salt, and squeeze of lime. Make sure you keep tasting the flavor, so you can determine if you want to add more salt or lime.

Serve the soup and add a touch of pepper for a final touch! 😉
