Mixed Greens with Honey Cider Vinaigrette
My sister made this salad for me the last time I visited her and I’m obsessed! She made it with red kale, which I didn’t have but it tastes just as good with mixed greens. It’s fresh, light and you won’t want to stop eating it!
Ingredients: (Approximate measurements)
2 tbsp apple cider vinegar
3 tbsp minced shallots or red onion
2 teaspoons honey
1/4 cup light olive oil
1/2 lemon
1/2 red apple, thinly sliced
1 1/4 cup of mixed greens
1/4 of sliced raw almonds
Salt and pepper to taste
Combine olive oil, vinegar, lemon, and honey in a small bowl, and whisk until blended. Season vinaigrette to taste with salt and pepper.
Combine mixed greens, apples, almonds, and shallots in a large salad bowl. Drizzle with vinaigrette; toss and enjoy!
