Cauliflower Pizza
Who doesn’t love pizza? but how often can we actually have pizza without feeling guilty about all the carbs. I tried making cauliflower pizza many times and most of those times, I failed. They would either fall apart or they just wouldn’t taste good at all. After googling all possible techniques for making the cauliflower crust a success, I finally figured it out!
Keep in mind that this could never replace real pizza but it does the trick for when you are trying to be more health-conscious and still want something that tastes delicious.
Ingredients for the crust: (1 pizza)
5 cups of cauliflower rice (I used the frozen one)
1/2 cup of parmesan cheese
1 egg
Salt and pepper to taste
Sprinkle of Italian seasoning
1 garlic clove
Parchment paper
Ingredients for the marinara sauce:
1 can of crushed or whole peel tomatoes
Fresh basil leaves
3 garlic cloves
Salt & pepper to taste
Red hot chili flakes
Pinch of sugar
Olive oil
Toppings: (This is what I used but you do you)
Prosciutto di Parma
Mozzarella cheese
Red hot chili flakes
Fresh basil leaves
For the crust:
Before we get started with anything, pre-heat your oven to 400F.
Place the 5 cups of cauliflower rice in a bowl and put them in the microwave for 5 minutes. After that, let it cool down for a few minutes and drain the cauliflower using a nut milk bag or a clean kitchen towel and squeeze it until you get all the water out. This is the trick for the crust not to fall apart!
After you get all the moisture out, in a bowl, mix the cauliflower with the parmesan cheese, egg, salt & pepper, Italian seasoning, and garlic. Use your hands to mix it up!
On a baking sheet/parchment paper, shape your pizza crust, make sure your crust is thin (as seen in the pictures), and put it in the oven for 25 minutes.
While your crust is in the oven, you can make your marinara sauce. Simply sauté the garlic in olive oil for 5 minutes and then add your crushed tomatoes. Add the fresh basil (about 4 leaves,) salt & pepper, chili flakes to taste, and a pinch of sugar just to cut the acid of the tomato sauce. Cook this for about 30 minutes in low heat.
Add your marinara sauce, mozzarella cheese, and any other toppings and put the pizza back in the oven for 10 more minutes (except the prosciutto and basil leaves, you don’t want to cook those)
