Zucchini Carpaccio
Easy, fresh and light, this recipe only takes 10 minutes to make.
What you need:
1 Zucchini (thinly sliced)
1/2 garlic clove (minced)
1 1/2 tb spoon of olive oil
1/2 tb spoon of fresh basil
1/2 tb spoon of crushed almonds
Salt and pepper to taste
How to make it:
Slice the zucchinis using a mandolin or a potato peeler (I used the later.) Place them on a large plate (as shown in the picture) and in a small bowl, mix the olive oil, and minced garlic to then drizzle it on top of the zucchinis. Top if off with salt & pepper, almonds, and fresh basil.
